FAQs

Nolen Gur, or Jhola Gur, is the fresh, liquid syrup made by boiling the sap of the date palm tree. It's a seasonal winter delicacy from West Bengal, prized for its smoky, caramel flavour.

Both come from the same date palm sap. Nolen Gur is the liquid, pourable syrup (jhola). Patali Gur is that same sap boiled down further until it becomes a solid block (patali).

Pure Nolen Gur has a thick, viscous consistency (not watery), a deep golden-brown colour, and a natural smoky aroma. It should not contain any added sugar, crystals, or artificial flavours.

It's rich in minerals, especially iron (estimated 11 mg per 100g), which helps combat anemia. It also provides magnesium and potassium, boosts energy naturally, and is loaded with antioxidants.

Always store Nolen Gur in an airtight container in the refrigerator. This is essential to prevent fermentation and preserve its fresh flavour. When refrigerated, it lasts for several months.

Our Nolen Gur is authentic because we source it directly from 'shiulis' in Bankura and ensure it's made traditionally—harvested cold and boiled immediately, with no adulteration or additives. The support we provide to the Shiuli community in Bankura district, and our long relationship with them gives us access to the purest form of Noen/Jhola gur.

The nolen gur price reflects its artisanal and seasonal nature. Because it's a labor-intensive, pure product, it is a premium delicacy. Please check the top of this page for the current price.

Look for several key indicators of authenticity. Pure Jiren nolen gur should have a crystal-clear appearance in liquid form, a characteristic smoky-sweet aroma from wood-fired processing, and a relatively soft texture. Importantly, authentic Jiren gur may form small sand-like crystals or leave a sandy texture at the bottom – this is a sign of quality, not a defect. Check the source: verified suppliers who can confirm their Siulis use proper tree rotation methods (giving trees three days of rest between tapping) are more likely to offer genuine products. Avoid gur that stays perfectly smooth indefinitely or lacks the natural caramel notes. The presence of micro-crystallization indicates high sucrose content and minimal chemical intervention.

Sand-like granular crystals in liquid nolen gur are sucrose crystals that form naturally and indicate exceptional quality. These crystals develop because Jiren sap has very high sucrose content after the tree rests for three days. When this sap is boiled and cooled quickly, the high concentration of natural sucrose crystallizes into fine granules, similar to misri or candy sugar crystals. This crystallization happens because authentic ‘Jiren kather gur’ such as HealthyFly Nolen gur contains no chemical crystallization controllers, glucose syrup, or artificial additives that would prevent crystal formation. The slightly higher moisture content in properly made Jiren gur, combined with high sucrose levels, creates perfect conditions for micro-crystallization. Real gur connoisseurs specifically seek this "bali" (sand) texture as proof of premium quality and chemical-free production.

Crystalline deposition at the bottom is a clear sign of authenticity, not adulteration. This happens exclusively with high-quality Jiren gur for several scientific reasons: First, Jiren sap collected after three days of tree rest contains significantly higher natural sucrose, which crystallizes when cooled. Second, authentic Jiren gur undergoes fast cooling after minimal boiling time, causing sucrose to separate into fine crystals. Third, pure gur contains no glucose syrup, inverted sugars, or anti-crystallizing chemicals that would prevent this natural process.
