Origin and Traditional Harvest

Our Nolen Gur comes from Bankura, West Bengal. We partner with traditional 'shiulis' (sap collectors) who harvest the fresh khejurer rosh before dawn. The sap is only collected when temperatures drop below 15°C and is boiled immediately over a wood fire to lock in its unique flavour and purity.

Taste, Texture, and Culinary Uses

This is a thick, viscous, pourable syrup with a deep golden-brown colour. It has a distinct smoky, caramel-like flavour that is uniquely Bengali. It's perfect for drizzling over ice cream, kheer, roshogolla, or sandesh, and essential for making traditional payesh and pithe-puli.
