Ingredients:

  • 300 grams Amla
  • 150 ml Nolen Gur
  • 2 tablespoons Sugar
  • 1 teaspoon Salt (or as per taste)
  • 1 tablespoon Roasted Spice Powder (coriander seeds, cumin seeds, fennel seeds, fenugreek seeds, 1 dried red chili)
  • 2-3 Dried Red Chili
  • 1 teaspoon Panch Phoron
  • 1/2 teaspoon Turmeric Powder
  • 2 tablespoons Mustard Oil

Cooking Instructions:

*Step 1 – Preparing the Amla:*

   – Boil the amla for 10 minutes without using a pressure cooker, adding a pinch of salt to the water.

*Step 2 – Deseeding Amla:*

   – Allow the boiled amla to cool, then deseed the fruit.

*Step 3 – Roasting Whole Spices:*

   – In a pan, dry roast 1/2 teaspoon each of coriander seeds, cumin seeds, fennel seeds, fenugreek seeds, and 1 dried red chili. Once cooled, grind them coarsely.

*Step 4 – Cooking Amla:*

   – Heat oil in a pan, add dried red chili and panch phoron. Fry for a minute or two.

   – Add the deseeded amla, fry briefly, and then add salt and turmeric. Mix well, cover, and cook. The amla will release water when salt is added.

*Step 5 – Sweetening the Deal:*

   – Introduce nolen gur and sugar, ensuring a thorough mix. The sugar will caramelize, coating the amla. The mixture may become a bit watery initially, but don’t worry. Stir for a few minutes.

*Step 6 – Infusing Sweetness:*

   – Cover and let it sit for 3-4 minutes, allowing the amla to absorb the sweetness from the gur.

*Step 7 – Adding the Spice Essence:*

   – Once the water is absorbed, stir in the roasted spice powder. Mix well, and your Nolen Gur Amla Achar is ready.

*Step 8 – Storage:*
