INGREDIENTS
– 1 liter Full Fat Milk
– 1 tsp Healthyfly Pure Ghee
– 50 grams Rice (refer to my tips above for suitable rice options)
– 1/8 cup Sugar
– 100 grams Healthyfly Jhola Nolen Gur
– 1 Bay Leaf
– ¼ tsp Cardamom Powder
– 2 tbsp Raisins, soaked in water
INSTRUCTIONS
1. Rinse the rice thoroughly and spread it on a paper towel. After 5 minutes, transfer the rice back to a bowl and mix in the ghee.
2. In a wide-mouthed pan, such as a non-stick kadai or wok, bring the milk to a boil over high heat, adding the bay leaf. This process takes approximately 7-8 minutes.
3. Reduce the heat to medium and simmer for an additional 5 minutes, stirring continuously with a wooden spatula.
4. After 5 minutes, add the rice to the milk, increase the heat to high, and bring the mixture to a boil. Stir continuously to prevent the milk from burning.
5. Allow the milk to boil for 5-8 minutes, stirring vigilantly.
6. Reduce the heat to medium and continue stirring and cooking for another 5-8 minutes, during which the milk will significantly reduce. Scrape off the accumulated milk fat from the sides for enhanced flavor.
7. Check if the rice is cooked by taking a grain and smushing it between your thumb and forefinger. If the rice can be smushed to an almost paste-like consistency, it is cooked. If not, cook for an additional 5-8 minutes over high heat and test again.
8. By this point, the payesh should have reduced by at least ¼ of its original volume. Add sugar and the drained, soaked raisins, stirring for another 5 minutes.
9. Remove from heat and add the grated nolen gur. Stir a few times and let the gur melt. Cover the mixture and let it stand undisturbed for 10 minutes.
10. Finally, add the cardamom powder and give everything a final stir.
Your delightful Nolen Gurer Payesh is now ready to be served.
